You are right about the potato starch, and this makes the krumkake more crispy. <br />I think maybe your batter was thicker because of the amount of plain flour, plain flour absorbes more moisture than potato starch. Did you add all the water as well? I tried your recipe with 1 change: as I did not have potato flour at home (I found later on the internet that you in Norway use potato starch and it's not flour - is it true?), I used 280g plain flour. And I whisked eggs with the sugar until it was thick, pale yellow and creamy. The batter of the krumkake was so thick! My krumkakes did not want to harden after baking - only some of them that were baked until not golden colour but light brown. The taste was very good though....what do you think the problem could be? The double amount of plain flour or whisking the eggs and sugar until thick?
