I have several friends who are (or have children who are) gluten intolerant. I feel for them, but at least these days there are more options than ever before. Most recipes I have seen use xanthum gum, another thickening agent, but I couldn't find it anywhere. The people at the health food shop told me I could use locust bean gum instead (also known as E410), and it works just as well :)<br />It helps make the dough elastic, or more "sticky" if you like, in normal bread the gluten in the flour does this job. If you omit it, the bread will fall apart into a pile of crumbs when you start slicing.. I suppose the addition of egg also helps binding the ingredients. It's nice to have a recipe like this in your repertoire, you can freeze it as well.
