Gresskarbrød
(Pumpkin Bread)

Jeg er så heldig å ha venninner som er like glade i å bake som meg, og det har resultert i lærerrike og smakfulle "bake-sammenkomster". To av jentene er amerikanske, så da vi skulle treffes hos en av dem, Camilla, var det Pumpkin Bread som var dagens prosjekt. Hun hadde allerede forberedt gresskar-puréen (stekt biter av gresskar i ovnen til de ble møre, deretter kjørt i food processor), men man kan også like gjerne bruke ferdig puré fra en hermetikkboks.
Da disse brødene/formkakene sto i ovnen ble huset fylt av en deilig duft (som forøvrig ga meg julestemning!) og de smakte kjempegodt til kaffen :)

I'm lucky enough to have friends who enjoy baking just as much as I do, and the result has been instructive and tasty "bake-alongs". Two of the girls are Americans, so when we met at Camilla's, Pumpkin Bread was the project of the day. She had already prepared the pumpkin purée (baked chunks of pumpkin in the oven until tender, then processed until smooth), but you could just as well use pumpkin from a can.
While these loaves were in the oven the house was filled with the most wonderful smell (a smell that put me in the mood for Christmas!) and they tasted superb with coffee :)

Du trenger:
(til 2 brød)
8 1/4 dl hvetemel
2 ts bakepulver
1 ts malt kanel
1 ts malt muskatnøtt
1/2 ts malt nellik
3/4 ts salt
1/2 ts natron
2 1/4 dl lyst brunt sukker
1 3/4 dl skummet melk
3/4 dl vegetabilsk olje (f.eks solsikkeolje)
2 store egg
1 boks gresskarpuré (ca 400 g)
(hvis ønskelig: tilsett 1 dl valnøtter, hakket, eller en/flere av andre variasjoner: andre typer nøtter, tørkede tranebær, rosiner...)

You'll need:
(for 2 loaves)
3 1/2 cups all purpose flour
2 tsp baking powder
1 tsp ground cinnamon
1 tsp ground nutmeg
1/2 tsp ground cloves
3/4 tsp salt
1/2 tsp baking soda
1 1/4 cups brown sugar, packed
3/4 cup fat-free milk
1/3 cup vegetable oil
2 large eggs
1 can pumpkin (15 ounce/400g)
(optional: 1/3 cup walnuts, chopped, or other variations such as other nuts, dried cranberries, raisins...)



Sett på ovnen til 175 C.
Mål opp melet og ha over i en bolle. Ha oppi de neste 6 ingrediensene (bakepulver, kanel, muskat, salt, natron, nellik) og bland.
Bland resten av ingrediensene (sukker, melk, olje, egg, gresskar) i en annen bolle.
Lag en liten fordypning i midten av mel- og krydderblandingen, tøm de våte ingrediensene oppi. Rør forsiktig, akkurat så lite som må til for at alt blandes. (Vend inn eventuelle nøtter.)
Tøm røra over i to smurte brødformer (ca 1 liter), og sett i ovnen i ca 1 time. (Sjekk med en tannpirker el.l. - stikk den inn i midten av kaken, hvis den er "ren" når du tar den ut igjen så er brødene ferdige.)
La brødene avkjøles litt i formene før du tar dem ut og avkjøler dem helt på en rist.

Preheat oven: 175 C/350F.
Lightly spoon flour into a dry measuring cup, add to a bowl. Add the next 6 ingredients on the list (baking powder, cinnamon, nutmeg, salt, baking soda, cloves) and mix to combine.
Mix sugar, milk, oil, eggs and pumpkin puré in a separate bowl, mix well.
Make a well in the centre of the flour/spice-mix and pour in the wet ingredients.

Stir carefully, just enough to combine everything. (Fold in nuts, if using.)
Scrape the batter into two greased loaf pans (8x4 inch), and put in the oven for about an hour. (Check with a wooden pick inserted in the center, if it comes out clean the breads are done.)
Leave the breads to cool a little in their pans before turning out on a wire rack to cool completely.
