Laksetartar med agurksalat
(Salmon tartare and cucumber salad)



Dette er nydelig, lett sommermat. Perfekt på verandaen en varm kveld sammen med et glass avkjølt hvitt, eller som forrett og apetittvekker.
Enkelt er det jo også siden det ikke er noe koking eller steking involvert; bare kutting og røring. Bare husk å bruke laks av topp kvalitet her, det er ingen vits å risikere noe når laksen skal serveres rå.


This is lovely and easy summer food. Perfect on one of those evenings when it's still nice and warm outside, accompanied by a nice glass of chilled white, or as a simple starter/appetizer.
It's easy to make as well since there's no actual cooking involved; cutting and mixing only. Just remember to use top quality salmon here, no need to put anyone's health at risk now that you're serving raw fish.



Du trenger:
(2-4 personer, avhenger om det skal være en egen smårett eller en forrett)
400 g rå laks av ypperste kvalitet, som f.eks Salma, skåret i små biter
150 g røkt laks, skåret i små biter
1 ts dill, finhakket
1 ts persille, finhakket
2 ts kapers
1/4 rødløk, finhakket
1 ss sylteagurk, i små biter
salt og pepper
1 ss vodka
1 ss sitronsaft


Til agurksalaten:
ca 1/2 agurk, skåret i veldig tynne skiver
litt hvitpepper
1 ss dill, stilkene skåret bort
2 ss hvitvinseddik
en klype salt
en klype sukker




You'll need:
(2-4 servings, depending on whether it's a dish in its own right, or a starter)
400 grams raw salmon, best quality, cut into small cubes
150 grams smoked salmon, cut into small cubes
1 tsp dill, finely chopped
1 tsp parsley, finely chopped
2 tsp capers
1/4 red onion, finely chopped
1 tbsp pickles or cornichons, finely diced
salt and pepper
1 tbsp vodka
1 tbsp lemon juice


For the cucumber salad:
about 1/2 cucumber, very thinly sliced
a little white pepper
1 tbsp dill, stalks removed
2 tbsp white wine vinegar
pinch salt
pinch sugar

Bland sammen laks, røkt laks, dill, persille, capers, rødløk og sylteagurk i en bolle, krydre godt med salt og pepper.
Dekk til bollen med plastfolie og la ingrediensene stå og mingle seg på kjøkkenbenken i en halv til en time.
Rett før servering tilsetter du vodka og sitronjuice som du blander godt inn.
Agurksalaten:
Bland sammen eddik, salt og sukker i en bolle. 
Bland inn agurkskivene, litt hvitpepper og dill.
Servér laksetartaren med agurksalaten, og gjerne litt godt brød også om du vil.


Combine the chopped salmon, smoked salmon, dill, parsley, capers, red onion and chopped pickles in a bowl, season well.
Cover the bowl with some cling film and leave the ingredients to mingle a little at room temperature, 30 minutes to an hour.
When you are ready to serve, add the vodka and lemon juice and give it a good stir.
The cucumber salad:
Mix together the vinegar, salt and sugar in a bowl.
Add the cucumber and toss, then grind some white pepper in there and sprinkle over the dill.
Serve the salmon tartare with the cucumber salad, and with some good bread on the side, if you like.

    Would it be better to use fish that has been previously frozen I'm wondering? As suggested when making sushi?

  2. Thank you Anna! I guess if you trust your source you would be fine using fresh fish, and also in this recipe there's vodka which kills some of the bacteria. But I'm not sure what's best, frozen or not... :-/
