Are you one of those people who often have stale, dry bread hanging around? Then this is the salad for you. The Italians have developed so many ways to avoid throwing food away, we have so much to learn from them! Apparently it was the Italian mammas who came up with this clever way of transforming stale bread into a delicious meal. I think this salad is good as it is, but it's also a nice accompaniment to chicken and red meat, and grilled meats. (You can find hundreds of recipes for Panzanella, this time I was inspired by Nigella Kitchen.) |

I remember writing to the Nigella Team 'suggesting' (how much front do *I* have?) that I'd love to see a Panzanella recipe from Nigella as I knew I'd love it:) LOL So when it was published and I blogged about it, I titled it 'Nigella's recipe just for me' (wishful thinking;)). I DO like it too, though it is different from my own idea of the recipe where I toasted the bread. This one is easier and quicker:)
